This 3 ingredient maple dijon deviled eggs recipe is so easy you can enjoy them every day. And mayonnaise isn’t one of them!

My flock of hens are laying 12-15 eggs a day. Can you believe it? It is so much fun to go out several times a day and find little treasures! That being said, the eggs are taking over my kitchen.
When your flock is producing a dozen or more a day, you have to get creative with moving eggs. Always make sure there is enough eggs for you and your family. But now is a time to start selling eggs to offset the cost of feed or you can start gifting them to friends, neighbors, and coworkers. Gifting eggs to neighbors has become one of my favorite ways to build a local community. It’s so wholesome and old fashioned, I love it!
Even with selling and gifting, I am finding myself with an abundance of eggs, so I have been tinkering with new recipes. I love a classic hard-boiled egg seasoned with salt and pepper but having them on repeat can get a little old.
One of my absolute favorite and easiest recipes I have created is my maple dijon deviled eggs. I typically make these in smaller quantities as it is intended to to serve only one or two people. Why wait for a holiday to enjoy a flavored deviled egg? You can whip these up in less than 5 minutes and enjoy any time you want! The ingredients are simple enough that you can adjust based on the number of deviled eggs you wish to serve.
What’s the trick to deviled eggs?
The trick to deviled eggs is a well made hard-boiled egg. Check out my post on how to make hard-boiled eggs easy to peel. When a hard-boiled egg is properly made, the egg shell peels away easier leaving you with a beautiful egg white and fingers that don’t hurt as a result. For the filling, you can simply use a spoon or knife or if looks matter, you can always using a piping bag.
Does maple dijon sound funky to you?
Trust me, it pairs well! The maple syrup is actually quite subtle and mellows out the tang of the dijon mustard.
Preparing for a larger party?
This recipe was originally designed to make 4 deviled eggs (2 whole eggs split in two). I don’t believe in waiting for holidays to enjoy foods like deviled eggs! But these are too delicious to only enjoy by yourself. Take them with you to the next holiday potluck. For every two eggs hard-boiled, you will need 1 tsp of dijon and 1/4 maple syrup. I recommend a minimum of 2 cream-filled hard-boiled eggs per person. That would be 1 whole hard-boiled egg before being split and filled. So if you are serving a party of 10, you should prepare 10 hard boiled eggs in order to create 20 deviled eggs. To make the filling, add the cooked egg yolks to a bowl and combine with 10 tsp of dijon mustard and 2.5 tsp of maple syrup.

- 2 Hard-boiled eggs
- 1 Tsp Dijon Mustard
- 1/4 tsp Maple Syrup
