Blueberry Pie Chia Pudding

A simple, wholesome make-ahead breakfast that tastes like blueberry pie in a jar.

Ingredients (serves 1 + a toddler):

  • 2 tbsp chia seeds
  • ½ cup milk of choice (dairy, almond, coconut, etc.)
  • ¼ cup frozen blueberries (or a generous handful)
  • ½–1 tsp maple syrup (or to taste)
  • A dash or two of cinnamon
  • A tiny splash of vanilla extract

Instructions:

  1. In a jar or bowl, combine chia seeds, milk, maple syrup, cinnamon, and vanilla. Stir well to avoid clumping.
  2. Add frozen blueberries and give it another gentle stir.
  3. Let sit for 5–10 minutes, then stir again to keep the seeds from settling.
  4. Cover and refrigerate overnight (or at least 2-4 hours) until thick and pudding-like.
  5. In the morning, top with a few extra fresh, non-frozen, berries, a drizzle of maple syrup, or a dollop of yogurt if desired.

Notes:

  • Measurements are suggestions; feel free to measure with your heart.
  • Add more milk in the morning if you prefer a looser texture.
  • For extra protein, mix in a spoonful of Greek yogurt or collagen powder.
