Ingredients:

  • 1 lb ground beef (preferably grass-fed and locally sourced)
  • 2–3 medium gold potatoes, diced small (1 inch cubed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 2 tbsp fat of choice (butter, olive oil, avocado oil, ghee, or beef tallow)

Instructions:

  1. Par-cook the potatoes: Add diced potatoes to a pot of salted water. Simmer for 5–7 minutes until just fork-tender. Drain and set aside.
  2. Brown the beef: In a large skillet, heat the pan before adding the ground beef. Break it up as it browns. Season with salt and pepper. Once cooked through, remove from pan and set aside.
  3. Sauté the veggies: Add 1 tbsp fat to the skillet. Sauté the onions until soft, then add garlic, and the pre-cooked potatoes. Let the potatoes get golden and crispy. Let the potatoes sit untouched for 5-7 minutes on each side. Potatoes will become mushy and fall apart if it’s too soon, so don’t rush this part. Add paprika and salt & pepper to taste. (Add garlic powder too if it suits you fancy, measure with your garlic-loving heart.)
  4. Combine: Add the beef back into the pan. Stir to combine.
  5. Plate and Enjoy!
