Soft, simple, naturally sweetened, and no refined sugar.

Ingredients:
- 1 cup peanut butter (natural, creamy works best)
- 2 large eggs
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 1 cup organic all-purpose flour
Instructions:
- Preheat oven to 350°F. Line a baking sheet with chlorine-free parchment paper.
- Mix wet ingredients:
In a large bowl, whisk together peanut butter, eggs, maple syrup, and vanilla until smooth. - Add baking powder and flour:
Add in baking powder first until well combined with the wet ingredients. Gradually add in the flour until thoroughly mixed, making a soft, scoop-able dough. - Scoop and flatten:
Use a spoon or small cookie scoop to portion dough onto the baking sheet. You may also use your hands like a barbarian, as I do. Gently flatten with your fingers or the back of a fork, creating the quintessential criss-cross pattern. - Bake for 8–10 minutes, until edges are just set and centers look puffed but soft. Don’t overbake. They will come out of the often soft but will firm up as they cool. Trust, and have faith.
- Cool on the pan for 5 minutes, then transfer to a wire rack.
