This easy three ingredient pancake is literally the easiest way to use up your sourdough starter discard.

For the love of all things, stop tossing it out! I have the easiest recipe for you to use up that discard in a nutritious and delicious snack! Pull out the frying pan and some avocado oil and you can have a guilt-free tasty snack in under 5 minutes.
What is Sourdough Starter Discard?
If you are new to keeping a sourdough starter, congratulations you have essentially just brought in a new pet to the home! It requires care and maintenance as you start your sourdough journey! While maintaining your sourdough starter, it will require feedings. The frequency of these feedings depends on the storage temperature.
If you are planning to bake often, you may consider keeping your sourdough starter on the counter at room temperature. This route will require more frequent feedings. As a result, there will be more discards. As you feed your sourdough, you will need to provide it enough flour and water to the starter so that it is a 1:1:1 ratio. In order to prevent your sourdough starter from taking over your home, you must discard enough of your sourdough starter to meet this ratio.
If you aren’t planning to bake as often or will be away on vacation for any amount of time, you will want to store your starter in the fridge. This will slow down the fermentation and rate at which your sourdough starter needs to be fed. If stored in the fridge, it won’t need attention again for up to 2 months (though I recommend checking on it and not waiting 2 months between feedings).
Either way you plan to store and maintain, there will be sourdough starter discard somewhere along the way. I have the easiest recipe for a savory pancake that you are going to want to try!
Sourdough Starter Discard Pancake Recipe
Ingredients
- 1 tbsp avocado oil
- 1 cup sourdough starter discard
- 1 tbsp diced shallot
- 1 tbsp fresh chives
- Soyaki Sauce for dipping
Instructions
<ol><li>Coat the bottom of the frying pan with avocado oil</li><li>Bring the pan to medium-high heat</li><li>Add the sourdough starter discard to the pan, creating a round pancake</li><li>Sprinkle the diced shallot and chives to the top of the discard</li><li>Let the sourdough discard sit until the bottom and edges start to turn a light golden color</li><li>Using a spatula, flip the pancake and let cook on the opposite side until light gold.</li><li>Plate the pancake and enjoy with soyaki dipping sauce or your dipping sauce of choice.</li></ol>
Notes
I like to use shallots and chives in this recipe. But, this is a low stakes recipe with plenty of opportunity to refine to your taste and preferences. Or, even just a great opportunity to use up an ingredient you have on hand. Garlic, leeks, and scallions make great alternatives.
